SCHOOL OUTINGS

How was your week?
Mine was packed with things to do :)

THURSDAY, NOVEMBER 24, 2011.

Its the night of the Grand Gala :)

It was really a cocktail party, very little food but champagne and wine.  They had a run way set up where models modeled with the plates and pieces for the store.



Drum roll PLEASE! 
The winner is ... ?

I got second place but 1st runner up. The 1st place award was called Excellence award, it was the blue table that won. 
I got a certificate, a present and my prize. 


My prize is a super expensive bowl from:

Christofle-Paris



FRIDAY, NOVEMBER 25, 2011.

I bought a fridge! :D

The school hosted a trip to go and watch Swan Lake the ballet. 





The ballet was ok, it was performed by a local group and done to recorded music. I enjoyed a delicious glass of rose champagne at the show :) 

SATURDAY, NOVEMBER 26, 2011.

We went to the Montreux Christmas Market. 

I feel like I am in santa's town when i'm there. They have built about 100 stalls, they have food, spice wine, christmas ornaments and many others things for sale. 

They have a GIANT Ferris wheel!! :) 



MONDAY, NOVEMBER 28, 2011.

The school took us on a trip to the onion market in Berne. It was nice but we didn't get much time to explore.


This week was a Christmas theme :) I did the table setting. 









WEDNESDAY, NOVEMBER 30, 2011.

In cooking class we made:


Appetizer: Spanish Omlette.
Entre: Poached Chicken with vegetables, coronation sauce and boiled potatoes.
Dessert: Pineapple Upside Down Cake.

Most girls are off to Copenhagen this weekend. I will be relaxing and studying .. end of term exams coming up.

Maître d’hôtel and School

How was your week?? Mine was good overall, ups and downs as usual.

This weekend i just stayed at school relaxed and studied.

MONDAY, NOVEMBER 22, 2011.

Now this was a long day. I have my normal floral class but we couldn't do the table centre piece because some one else was to do it as a part of her hostessing exam so we did individual trays. I used a classic Arabian theme. 




And then I was the maître d’hôtel for Tuesday's practical service meal. So i had to set up for that ... sorry forgot to take pictures of set up. It really was an intricate task.

The student who was to do the flowers and set the table for her hostessing exam was sick so I had to do that too ... it was a LONG day. 

TUESDAY, NOVEMBER 23, 2011.

I was the maître d’hôtel. This involves being in-charge of the staff, food service, setting up plates and dishes, ect ... The hostess and host deals with entertaining their guests.


WEDNESDAY, NOVEMBER 23, 2011.

In cooking class we made:

 

Appetizer: Fresh green salad with a balsamic vinaigrette and Fanned roasted zucchini with feta cheese, dried tomatoes and olives.
Entree: Veal Piccata, Spaghetti with green pesto and aubergine rolls (eggplant rolls filled with mozzarella cheese and a slice of tomato.)
Dessert: Citrus fruit salad (grapefruit and oranges) and Mango ice-cream. 

Tomorrow night is the gala dinner at 7p.m. ... so next week you will hear the outcome.

Vevey and School

Hey!! How was your week? Mine was a little ruff but pressing on.

SATURDAY, NOVEMBER 12, 2011.

Winter is upon us ... autumn is ending as the leaves shed!

So I went to Vevey this weekend to buy a coat and I got one :) ... it is getting cold and getting cold fast.

I even went to the national food museum of Switzerland. Yes leave it to me to go to the museum all about food .. yuum!




TUESDAY, NOVEMBER 15, 2011.

This week was a students final maître d’hôtel exam. I was service staff. This means she was in charge of the meal service and her waiters (me and 3 other students).


I was in charge of the Table setting but the flowers were quite amazing. They built a structure out of sticks and then did individual orchids in vases and hung them from the structure. 





WEDNESDAY, NOVEMBER 16, 2011.

In cooking class we made:

Appetizer: Mushroom Capachino (mushroom soup with cream ontop, served in a coffee cup 'normally')
Entree: Creole rice with Gratinated fish and vegetables (spinach) in mornay sauce
Dessert: Fresh Fruit Salad with Vanilla ice cream.

Then we had Cheese tasting for our evening class! The softer the cheese is the younger it is and you taste from mild to strong, so from young to old. I seem to prefer soft cheeses, Goat cheese, Tomme vaudoise and Brie were my favorites. 


Tomme vaudoise is a soft cheese from the Vaud canton of Switzerland. 
Brie is a soft cow's cheese which originated from the French region.

We ate the cheese with bread, grapes and walnuts! I recommend all these combinations. 
But make a note to yourself soft cheese it eaten on bread but hard cheese with knife and fork or with fingers. 

This gadget is called a Girolle. It is used for semi hard cheeses like Tête de moine ' Monk's head cheese.' 
A monks head is bald so you use the device to shave the top of the cheese like a head. 
Guess what?

Touzeau and School

Hey! how was your week?

MONDAY, NOVEMBER 7, 2011.

Our table theme for today was a girls birthday party. I was in charge of flowers and I did my first bouquet. The vase is very interesting it is a small vase in a big one and in-between are marshmallows.












I have finished up my table for the Touzeau competition. Fell free to tell me what you think.



TUESDAY, NOVEMBER 8, 2011.

Today was the official judging and here is my competition:




They were even so kind to give me present for participating. 
We found out what the prizes were:
1. $2400 CHF - Cutlery set and $2000 CHF -Vase
2. $2000 CHF - Bowl
3. $1800 CHF - Tray
They are two more prizes that i don't remember what they were. 

WEDNESDAY, NOVEMBER 9, 2011.

Guess what we made today in pastry class? Macaroons!


Macaroons made with Italian Meringue.
We did two different fillings:
1. Passion Fruit Filling
2. Cream of Pistachio filling

Most students left for Dubai on Tuesday, so the school is pretty empty.

I got the Gala date wrong last time sorry .. It will be on November 24, 2011.
